Many people who are intolerant and allergic to dairy and cows cheese find that they are OK with goats cheese as it contains much less Casein A1, which is the main allergen.
Ingredients
- 6 large eggs
- 200ml whole milk (or coconut milk)
- 1/2 tsp each salt and pepper
- 1 tsp grass-fed butter
- 3 large handfuls spinach
- 1/2 red onion, chopped
- 2 cloves of garlic, minced or finely chopped
- 100g goats cheese, crumbled
Instructions
- Preheat oven to 350 degrees F (180 C, gas mark 4). Whisk eggs, milk, pepper and salt.
- Sauté the onion, spinach and garlic in the butter in a non-stick (I use ceramic) frying pan over medium heat for a few minutes.
- Remove and place in an ovenproof dish. Pour over the egg mixture and sprinkle the goats cheese evenly over the top.
- Bake for 12-18 minutes, until mixture is set. Remove from the dish, slice and serve immediately.
