This is a wonderful alkaline, vegan, super-healthy, simple and deliciously tasty recipe. The curcumin in the turmeric combines with the cauliflower to produce a potent anti-cancer mix.
Ingredients
- 2 cauliflowers
- 200g mushrooms
- 2 medium tomatoes
- 1 courgette (zucchini)
- 1 leek
- 2 cabbage leaves
- 100g peas - fresh or frozen
- 1 vegetable stock cube
- 1/2 tsp cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1tbsp honey or maple syrup
Instructions
- Wash & break the cauliflowers into floret chunks, place into food processor or blender and process on low speed until chunks have broken down into rice-size pieces. Set aside cauliflower rice in a large bowl.
- Grate the courgette and chop all the other vegetables into medium chunks
- In a saucepan add the mushrooms, leek and tomatoes and cover with boiling water. Simmer for 5 minutes.
- Drain simmering vegetables and add other vegetables into saucepan with them. Place back onto heat. Add the spices and stock cube. Mix and simmer for another 2 minutes. Serve & enjoy.
