Notes
Serve these on their own or with ranch dressing, tahini sauce or gucamole.
Ingredients
- 400g/1lb 85% ground beef
- 200g 1/2 lbs chicken livers
- 1/2 red or white onion, minced or chopped finely
- small handful spinach
- 3 garlic cloves, crushed
- 1 tbsp butter
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 tbsp nutritional yeast
- 1 tsp apple cider vinegar
- 2 tsp sea salt
- 1 tsp black pepper
- olive oil for coating the meatballs
Instructions
- Heat butter in a large frying pan on medium heat and add the onion, and garlic and spinach and sauté and stir for around 5 minutes, until tender.
- Add in the chicken livers along with 1 tsp salt, dried oregano and thyme. Cook, stirring often, until the livers are browned all over. Add in the nutritional yeast and apple cider vinegar and cook until reduced and the livers are cooked.
- Remove from heat and allow to cool for a few minutes. Place in a food processor and pulse until it looks like ground beef. Then transfer to a large bowl, to cool to room temp.
- Pre-heat oven to 425F/220C/Gas Mark 7. Add the ground beef to the bowl with the remaining salt and pepper. Mix well. Shape into small balls.
- Drizzle olive oil all over a baking tray. With oiled hands, coat each meatball in a little olive oil and place it on the tray.
- Place in the oven, bake at 425F for 5 minutes. Then turn the temperature down to 350F and roast another 20 minutes. Serve and enjoy.
