Ingredients
- 2 eggs
- 1 tbsp coconut flour
- 2 tbsp water
- 1/3 tsp pink or sea salt
- 1/2 tbsp olive oil
- 1 tbsp butter
- home made mayonnaise
- 2 large handfuls of arugula/rocket
- pepper to season
Instructions
- Heat a large frying pan with the butter. Separate the egg whites from yolks and whisk the whites with the olive oil, water, coconut flour and salt.
- Pour mixture into pan and spread evenly. Cook for a couple of minutes, until mixture is solidifying. Flip the tortilla and cooks the other side until lightly brown.
